Ingredients
  

  • 3 tbsp chia seeds ~12g carbs
  • 1 cup unsweetened almond milk ~1g carbs
  • 1 tbsp ground flaxseed
  • ½ tsp vanilla extract
  • A few drops of stevia or monk fruit sweetener optional

Method
 

  1. Combine chia seeds, almond milk, flaxseed, and vanilla in a jar or bowl.
  2. Stir well for 1-2 minutes to prevent clumping.
  3. Cover and refrigerate for at least 4 hours or overnight until it reaches a pudding-like consistency.
  4. In the morning, stir again and top with a few nuts or berries if desired.

Notes

💡 Tip: Don't rush to eat your chia pudding! Leaving it in the refrigerator for at least 4 hours allows the seeds to form a thick gel, which increases satiety and slows digestion. This helps stabilize blood sugar levels throughout the morning. You can make large batches and enjoy them over the course of a week.
