  • 1/3 cup granulated erythritol or monk fruit sweetener, 64g
  • 1 large egg
  • 1 vanilla extract
  • 1/2 baking soda
  • 1/4 sea salt
  • 3/4 cup sugar-free chocolate chips 135g

Method
 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and sweetener until light and fluffy, about 2 minutes.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the almond flour, baking soda, and salt.
  5. Slowly fold the dry ingredients into the wet mixture. Don't overmix.
  6. Gently fold in the sugar-free chocolate chips.
  7. Use a cookie scoop to portion the dough onto the baking sheet, spacing cookies about 2 inches apart.
  8. Bake for 9–11 minutes, until edges are golden but centers look slightly soft.

  10. Let cookies rest on the baking sheet for 5 minutes before transferring to a wire rack.
