Phase 1: Prepare Filling and Sauce
- Heat the skillet over medium heat and add 1 tsp olive oil. Once warm, add the diced onion and cook for 2–3 minutes until softened.Add garlic and ground meat. Break the meat apart with a wooden spoon and cook until fully browned, about 5–6 minutes. Drain excess fat if needed. Season with Italian seasoning, salt, and pepper.Stir in the marinara sauce and let it simmer on low for 3–4 minutes. Choose a no-added-sugar marinara for better blood sugar control.
Phase 2: Prepare Cheese Mixture and Noodles
- In your mixing bowl, combine ricotta, half of the mozzarella (¾ cup), Parmesan, egg, and nutmeg. Stir until smooth.Cook your gluten free noodles according to package directions — but pull them out 1–2 minutes before they're fully soft.
Phase 3: Assemble and Bake
- Preheat your oven to 375°F (190°C). Lightly grease your baking dish.Spread a thin layer of meat sauce on the bottom of the dish to prevent sticking.Layer in this order: noodles (or zucchini), cheese mixture, meat sauce. Repeat until you've used all ingredients, finishing with a layer of sauce on top.Sprinkle the remaining mozzarella evenly over the top.Cover with foil and bake for 15 minutes. Remove foil and bake an additional 5 minutes until golden and bubbly. Let the lasagna rest for 5 minutes before cutting.
