Veggie & Egg Scramble with Avocado

Ingredients
  

  • 2 large eggs ~1g carbs
  • ¼ cup diced bell peppers ~2g carbs
  • ¼ cup chopped spinach
  • ¼ avocado sliced (~4g carbs)
  • 1 tsp olive oil
  • Salt and pepper to taste

Method
 

  1. Heat olive oil in a non-stick skillet over medium heat.
  2. Add bell peppers and sauté for 2 minutes until slightly softened.
  3. Add spinach and cook until wilted, about 1 minute.
  4. Whisk eggs in a bowl, then pour into the skillet. Stir gently until just set — do not overcook.
  5. Top with sliced avocado and season with salt and pepper.

Notes

💡 Tip: For the best effect on blood sugar levels, avoid overcooking vegetables. Leave peppers and spinach slightly crisp to retain the fiber, which slows down the absorption of sugar into the bloodstream. And don't overcook eggs, or they will become rubbery.
